High Protein Egg & Salad Bagel

This makes both a great lunch and breakfast option

Ingredients:

Serves 1 | 5 minutes cook | Approx 283 calories

  • 1 Bagel

  • 2 Eggs

  • (Salad if your choice) I am using - 1/2 cucumber & 1 tomato

  • Salt & pepper 

  • 2 tsbp Mayonnaise or Greek yoghurt (or you can just lemon juice and a hemp oil)

  • 1 tsp Dijon mustard

Instructions:

Step 1: Prepare the eggs

  • Boil the eggs for 3-4 minutes and run in cold water and peel

  • Pop in a bowl and mash with a fork

Step 2: Prepare the veggies 

  • Finely chop cucumber 

  • Finely chop your tomato and give a quick dab with kitchen roll to mop up some of the juices so it’s not too wet

Step 3: Bring mixture together

  • Add the cucumber & tomato to the egg mixture

  • Season with salt and pepper

  • Add in your yoghurt and mustard

  • Mix well

Step 4: Toast your bagel, layer on top & serve
