One pot open Burrito dish

Ingredients:
Serves 4-6 | 10 minute prep and 30 minute cook | Approx 1,230 calories for whole meal excluding toppings
500 Lean beef mince
1 Onion
1 Large red pepper
Taco seasoning mix of your choice
1 Tin of corn
1 Jar of Dorritos Salsa (300g), whatever spice level you like
Cherry tomatoes (optional)
1 Tin of black beans
Microwave rice cup (X1) 125g
Toppings to serve:
Chopped coriander
Chopped spring onions
Jalopenos
Dollops of sour cream
Grated cheese
Tacos (optional to crisp in air fryer and crunch over the top)
Instructions:
Step 1: Prepare the mince and onion
Finely chop the white onion.
Fry the mince in olive oil on a medium heat until brown (drain some of the liquid, not all, if excess fat leaks out).
Add the onion and fry for 2 minutes.
Step 2: Chargrill your capsicum at the same time the mince is cooking
Slice your peppers into 1-2cm thick strips.
Fry on a grill/ seperate frying pan until chargrilled (medium heat), set aside.
Step 3: Add seasonings
Add packet taco seasoning mix to the mince and onion, stir.
Add the Jar of salsa, stir, fill the jar with water and add to the pan, stir and cook for 5 minutes.
Step 4: Add your black beans & halved cherry tomatoes
Step 5: Microwave your rice
Step 6: Add your rice to the pan
Step 7: Add you tinned corn, mix well
Step 8: Prepare the top
Add grated cheese and put under the grill until bubbling brown.
Optional - oven/ or air fry your taco shells just to create some crunch for sprinkling on top.
Leave to cool for a few minutes, and then add the rest of the toppings: sliced spring onions, dollops of sour cream, Jalapenos, Coriander.
