Roasted Salami Cups

Raw salami in the baking tray cups

Oven at 180 degrees for 15 mins

Make your tomato basil filling

Stuff the roasted cups

Ingredients:

Serves 3-4

  • 1 pack of large salami/ Pepperoni (go for the packet that has the largest circles so they fit in the baking tray holes, the one you would use for cupcakes)

  • 1 punnet of cherry tomatoes or 2 large tomatoes

  • Fresh basil

  • Balsamic Glaze (I am using the brand Moro)

  • Salt and pepper

Instructions:

Step 1: Prepare

  • Preheat the oven to 190 degrees

  • Put each circle of salami in the cupcake tray (no oil required)

  • Once pre-heated put the salami in the oven for approximately 10-15 minutes until crisp

Step 2: Make the tomato bruschetta

  • Finely chop the tomatoes and place in a bowl - tip: if they are super watery dab with kitchen roll to take away some of the excess moisture

  • Finely chop basil leaves

  • Add salt and pepper in the bowl, set aside

Step 3: Assemble and serve

  • Take the salami cups out, leave to cool for 5 mins

  • Take the cups out the tray and place on the platter

  • Fill the cups using a teaspoon

  • Drizzle over balsamic glaze and serve!
