Veggie Valentine Frittata

Raw veg and egg mix

Pre-oven

Post oven

Served with some delicious chutney

Ingredients:

Serves 3

  • 3 Eggs

  • Splash of milk

  • Salt and pepper

  • 1 Zuchinni/ Courgette

  • 1 large tomato

  • 3 large mushrooms

  • Grated Cheese

  • Heart shaped cutter

Instructions:

Step 1: Chop the vegetables

  • Cube your zuchinni, chop your tomato and mushrooms into small pieces and place in a bowl

  • Add salt and pepper and mix

Step 2: Oven

  • Turn the oven on to 180 degrees

  • Line a suitable tray to put your frittata into with baking paper

Step 3: Make the egg mix

  • Beat the eggs in a bowl

  • Add a splash of milk and whisk

  • Add salt and pepper

  • Add a handful of grated cheese

Step 4: Finish the Frittata

  • Lay the vegetables in your lined tray

  • Pour over your egg mixture

  • Add more grated cheese

  • Oven bake for 180 degrees

Step 5: Make the love heart

  • When the frittata comes out of the oven, leave to cool (otherwise it wont stay in shape)

  • Place the heart cutter on the egg and serve! I have served with chutney on the side and it was the perfect pairing!
