1 packet of Maltesers (I am using honeycomb Maltesers)
2-3 very ripe bananas
1 teaspoon of baking soda or bicarbonate of soda
50 grams butter
1 tsp vanilla essence
1 large beaten egg
1/4 cup of white sugar
1-1/4 cups of flour (if using 2 bananas go for 1 cup, if 3 use the whole amount)
1 Loaf tin lined with baking paper
Instructions:
Step 1: Preheat oven to 180 degrees
Get all of your ingredients measured and ready to go
Step 2: Prepare the bananas
Peel and mash the bananas with a fork in a bowl
Step 3: Add the other ingredients
Microwave your butter for 20-30 seconds
Add your sugar, baking soda, vanilla essence and whisk into the bananas and butter and get some of the lumps out
Step 4: Add your flour
I use a sieve to add the flour in and whisk, it will feel a little heavier on the whisk
Step 5: Add the Maltesers (save a small handful to put on top)
Add the Maltesers in and whisk gently, and then pour into the loaf tin
Add a few of the Maltesers on top
Step 6: Bake
Bake the banana bread in the oven at 160 degrees, it will take approximately between 40-50 minutes depending on the size of the loaf tin. I usually check after 35 minutes, you will know when the cake is done as no wet mixture will show on the fork when you put it through the cake.
