Festive Red Fruit Salad
Ingredients:
Serves 4
Punnet of cherries
Punnet of strawberries
1/2 watermelon
Chopped mint
Honey
2 limes
Pomegranate seeds (completely optional for decor)
Instructions:
Step 1: Prepare the fruit
Wash the fruit and pat dry with kitchen roll
Slice up your strawberries
Cut your watermelon into cubes
Leave the cherries whole
If you want to sprinkle pomegranate seeds then get these ready and set aside
Finely chop mint leaves and set aside for later
Arrange on a serving platter, if you are preparing ahead of time then cling wrap and pop in the fridge and dress the fruit with the dressing at the time of serving (so it doesn’t go soggy)
Step 2: Prepare the syrup and serve
Squeeze the juice of two limes in a bowl
Squeeze approximately 2 tspb of honey in a bowl and mix
Dress the fruit with the syrup
Sprinkle the chopped mint leaves and pomegranate seeds over the fruit and serve
