Prawn Cocktail Bites

Ingredients:

Bulk up to suit number of guests

  • 2 Lebanese cucumbers (choose the thicker ones)

  • Ready cooked prawns (size to fit on a slice of cucumber)

  • Prepackaged chopped iceberg lettuce (or you can buy one & slice thinly)For the sauce:

  • Mayonnaise

  • Tomato sauce

  • Tabasco

  • 1 Lemon

  • Salt and pepper

Instructions:

Step 1: Prepare the ingredients

  • In a bowl mix 50/50 ratio of tomato sauce and mayonnaise

  • Add a splash of Tabasco (optional)

  • Salt & pepper

  • Squeeze 1/4 lemon juice (1 wedge) and mix altogether to make the sauce (adjust to your liking)

Step 2: Cut the cucumbers

  • Cut the cucumbers into 1cm rounds - dab both sides with kitchen roll to soak up the excess moisture and place on a serving platter

  • Finely chop 1/2 cup worth of iceberg lettuce and season with salt and pepper

Step 3: Assemble the ingredients

  • Place a teaspoon of sauce on the cucumber

  • Add a little sprinkling of lettuce

  • Add the prawn to each cucumber round

  • Repeat this with all the rounds

  • You can finish by squeezing lemon juice over the top and adding salt and pepper prior to serving
