Fetta and Veggie Prawn Bake
A quick home made crowd pleasing dish that is great for sharing and just hits the spot! Perfect for my beginners!
Ingredients:
Serves 2-3 | 45 minute cook | Approx 593 calories
2-3 Zuchinni’s (Courgettes)
1 Chopped Pumpkin
1 Bunch Asparagus
1 packet of raw prawns
1 Fetta Block
Fresh Thyme
1 Lemon
Salt, Pepper, Chilli, Oil
Instructions:
Step 1: Prepare
Preheat Oven to 180 degrees.
Get a roasting tray and put some oil in.
Add veg to the tray.
Add Salt, pepper, thyme and mix in oil to give it a light coating.
Step 2: Add the ingredients
Add Fetta Block on top.
Grate zest of lemon on Fetta.
Add salt and pepper and sliced red chilli is optional.
Drizzle a bit of oil on the fetta.
Pop back in the oven for 30-35 mins.
Step 3: Add the prawns
When close to cooked, add the prawns to the tray for the last 10 mins,
Add 3-4 lemon slices to the tray (on top of fetta, and a few on the veg).
Pop back in the oven for 10 minutes until the prawns are cooked.
Take out, squeeze lemon over the tray bake and mix in.
