Chicken Schnitzel Tray Bake

A classic dish that’s loved by the nation! One of the lowest maintenance dishes to cook and always hits the spot!

 Ingredients:

Serves 2 - 4 | 30 minute cook | Approx 856 calories for 2

  • 2-4 Schnitzels (depending on your tray size and how many people you want to feed)

  • Veggies of your choice – I am using:

  • 1 large red capsicum (sliced)

  • 1 small Broccolli (chop the florets_

  • 4 whole shallots (peeled and left whole)

  • 1 Sweet potato (chopped)

Instructions:

 Step 1: Prepare

Preheat the oven 180 degrees.

  • Chop the Veg ingredients into a similar size.

  • Add the Schnitzels.

  • Pop all the ingredients in a baking tray or split across two trays if easier.

  • Season with salt, pepper, and drizzle a generous serving of olive oil.

 Step 2. Cook & finish

  • Put into a pre-heated oven at 180 degrees and cook for approximately 35 minutes, if some of your veg cooks quicker than others take remove from the tray.

  • Serve with gravy.
