Frozen Cucumber and Coconut Smoothie

Ingredients:

Serves 1 | 5 minute prep time | Approx 197 calories (excluding protein powder)

  • 4 Frozen Lebanese cucumbers (skin on)

  • 500 ml coconut milk - Start with ½ tin and check consistency once blended.

  • ½ squeezed lemon

  • Protein powder optional

  • Berries and gut seeds to serve, I am using the gut seeds and recipe inspiration from brand @kapaipuku

Instructions:

Step 1: Make the smoothie

  • In a blender or Nutri bullet add your cucumbers and blend.

  • Add in half a tin of coconut milk, and squeezed lemon, & protein powder optional.

  • Add more coconut milk if the consistency is too thick.

Step 2: Add the finishing touches

  • Serve with berries of your choice, I am also topping mine off with some gut seeds.
