Lamb Tray Bake

A simple home made delight that is less intensive than a lamb roast and uses less pots and pans!

Ingredients:

Serves 2-3 | 45 minute cook | Approx 515 calories and 171 calories per serve based on 2 lamb cutlets

  • 1 Pack of lamb cutlets (leave out the fridge for 15 mins prior)

  • 2-3 cloves of garlic

  • 1-2 large carrots

  • 1 Large Zuchinni

  • 1 large potato

  • Fresh thyme, oil, salt and pepper

Instructions:

Preheat oven to 200 degrees.

Step 1: Prepare the veg

  • Chop the veg an even size and put all the ingredients in the tray.

  • Mix with the Thyme, oil, salt and pepper.

Step 2: Prepare the meat

  • Season the meat, and mix in the oil, hers and add to the tray.

Step 3. Cook and serve!

  • Pop the one tray in the oven (turning down to 180 degrees) for approximately 35 minutes.

  • Add more oil if required and turn the cutlets at the 20 minute mark.

  • Once cooked to your liking, serve and enjoy. Optional - serve with some natural yoghurt on the side and mint sauce!
