Mexican Bean Salad (V)

Ingredients:

Serves 2-3 | 10 minute cook | Approx 547 calories for whole bowl

  • 1 Tin of black beans

  • 1 Tin of corn

  • 1/2 Red capsicum (pepper)

  • Handful of cherry tomatoes

  • 1/2 Red onion

  • 1/2 Avocado

  • Feta cubes

  • Chopped coriander

  • Salt, pepper

  • 1-2 Limes

  • Chilli oil

Instructions:

Step 1: Prepare the vegetables

  • Wash and drain the black beans in a sieve.

  • Drain the sweetcorn.

  • Chop the red pepper.

  • Finely slice the red onion.

  • Chop your cherry tomatoes in half.

  • Finely chop the coriander.

Step 2: Assemble the salad

  • Put the beans and sweetcorn in a bowl.

  • Add the red pepper.

  • Add the onion and tomatoes to the bowl.

  • Mix and stir the ingredients.

  • Step 3: Add the final touches.

  • Add the cubed fetta (as much or little to your liking).

  • Add the coriander.

  • Add salt and pepper.

Step 3: Finish the salad, dress and eat!!

  • Halve the Avocado, cube and add into the bowl.

  • Squeeze lots of lime.

  • Chilli oil (optional) - and one final mix - enjoy!
