Easy Prawn Noodle Soup

A gorgeous low calorie lighter meal.

Super easy to make and ready in 10 minutes

Ingredients:

Serves 1-2 | 15 minute cook | Approx 486 calories

  • Raw prawns

  • 2 cubes of vegetable stock to one cup and 1/4 of water

  • Splash of soy sauce

  • Noodles (1 serve), Soba noodles pictured

  • 1 bunch of Bok choy/ Pak choy chopped

  • 2 Large mushrooms chopped

  • 1 chilli

  • Beansprouts (handful for serving)

Instructions:

Step 1: Prepare

  • Boil the kettle and mix 2 cubes of vegetable stock in a large cup (add another cup if you need more water).

  • Chop the Pak choy/ Bok choy.

  • Slice the mushrooms.

Step 2: Cook

  • Put the stock in a saucepan and bring to the boil.

  • Once boiling add your soba noodles, turn the heat to medium.

  • Add a splash of soy.

  • 5 mins towards the end add the greens, mushrooms and prawns, & chopped chilli to the soup - these will cook in the hot water.

Step 3: Serve

  • Serve when cooked through and top with beansprouts and chilli oil optional.
