Egg Mayo Muffins

Ingredients:

1 Muffin cut in half
2 eggs
2 tbsp mayonnaise
1/2 tsp Dijon mustard
Salt & pepper
Parsley
Instructions:
Step 1: Boil your eggs!
Boil your eggs and leave to cool.
Step 2: Prepare the muffin
Mash boiled eggs with a fork in 2 tbsp mayonnaise & 1/2 tsp Dijon, salt & pepper.
Finely chop some parsley and sprinkle into the mixture.
Toast your muffins.
Step 3: Get ready to eat
Spread the lovely mix over your toasted muffins and enjoy a yummy breakfast.
