Egg Mayo Muffins

Ready in a hot minute!

Ingredients:

Serves 1-2 | 10 minute cook | Approx 510 calories

  • 1 Muffin cut in half

  • 2 eggs

  • 2 tbsp mayonnaise

  • 1/2 tsp Dijon mustard

  • Salt & pepper

  • Parsley

Instructions:

Step 1: Boil your eggs!

  • Boil your eggs and leave to cool.

Step 2: Prepare the muffin

  • Mash boiled eggs with a fork in 2 tbsp mayonnaise & 1/2 tsp Dijon, salt & pepper.

  • Finely chop some parsley and sprinkle into the mixture.

  • Toast your muffins.

Step 3: Get ready to eat

  • Spread the lovely mix over your toasted muffins and enjoy a yummy breakfast.
