Quinoa Frittata

Picture before it's cooked - rainbow of colours.

High protein breakfast that will keep you satisfied.

Ingredients:

Serves 4 | 30 min prep & cook | Approx 629 calories for whole frittata

  • 1 cup of quinoa

  • 3 eggs

  • Handful of chopped spinach

  • Handful of chopped cherry tomatoes

  • Handful of chopped parsley

  • Parmesan for sprinkling

  • Salt & pepper

Instructions:

Step 1: Cook the Quinoa

  • Cook 1 cup of quinoa as per instructions on the packet and leave to cool.

  • Put 1/4 cup in a bowl (& use the remainder for other meals I like mine in salads).

Step 2: Prepare the Frittata mix

  • To the bowl add chopped spinach, finely chopped tomatoes and parsley.

  • Add salt & pepper.

  • Add to the bowl 3 whisked eggs.

Step 3: Cook the Frittata

  • Add Parmesan and put the mixture in a frying pan on a medium heat with oil.

  • Cook for 5 mins in the pan & then put under the grill to cook the top.

  • Further cheese is optional!
