Quinoa Frittata
Picture before it's cooked - rainbow of colours.
High protein breakfast that will keep you satisfied.
Ingredients:
Serves 4 | 30 min prep & cook | Approx 629 calories for whole frittata
1 cup of quinoa
3 eggs
Handful of chopped spinach
Handful of chopped cherry tomatoes
Handful of chopped parsley
Parmesan for sprinkling
Salt & pepper
Instructions:
Step 1: Cook the Quinoa
Cook 1 cup of quinoa as per instructions on the packet and leave to cool.
Put 1/4 cup in a bowl (& use the remainder for other meals I like mine in salads).
Step 2: Prepare the Frittata mix
To the bowl add chopped spinach, finely chopped tomatoes and parsley.
Add salt & pepper.
Add to the bowl 3 whisked eggs.
Step 3: Cook the Frittata
Add Parmesan and put the mixture in a frying pan on a medium heat with oil.
Cook for 5 mins in the pan & then put under the grill to cook the top.
Further cheese is optional!
