Ruths Easy Eton mess
Ingredients
Serves 4
1 pre-bought pavlova/ Meringue
1 punnet of raspberries
1 punnet of Strawberries
1 large double cream (can be whisked to thicken)
Mint leaves
3 Passionfruits
Instructions:
Step 1: chop and smash everything!
Wash and chop the strawberries
Leave the raspberries whole
Scoop out the passionfruit and set aside in a bowl
Smash the pavlova into chunks
Finely chop the mint leaves
Step 2: Assemble and serve
Put the pavlova / meringue into each bowl smashed into chunks
Add the raspberries, sliced strawberries
Add the cream
Spoon over the passionfruit
Sprinkle mint leaves
