Ruths Easy Eton mess

Ingredients

Serves 4

  • 1 pre-bought pavlova/ Meringue

  • 1 punnet of raspberries

  • 1 punnet of Strawberries

  • 1 large double cream (can be whisked to thicken)

  • Mint leaves

  • 3 Passionfruits

Instructions:

Step 1: chop and smash everything!

  • Wash and chop the strawberries

  • Leave the raspberries whole

  • Scoop out the passionfruit and set aside in a bowl

  • Smash the pavlova into chunks

  • Finely chop the mint leaves

Step 2: Assemble and serve

  • Put the pavlova / meringue into each bowl smashed into chunks

  • Add the raspberries, sliced strawberries

  • Add the cream

  • Spoon over the passionfruit

  • Sprinkle mint leaves
