Thai Red Curry Prawn Skewers with a Romantic Twist

Cut your cherry tomatoes in half & then a V to make a heart

Prawns in Red Thai curry paste

Ready for grilling or the BBQ

Finish with squeezed lemon & coriander (optional)

Ingredients:

Serves 2 | 15 mins cook| Approx 336 calories

  • 1 Packet of raw prawns (240g)

  • 1/2 Packet of cherry tomatoes

  • 2-3 Tsp Thai red curry paste (I am using the brand Ayam)

  • 1 Lemon

  • Coriander leaves (optional)

  • Salt and pepper

  • Bamboo skewers (pre-soaked for at least an hour or overnight)

Top tips:

  • The prawns can sit in the curry paste ahead of time. I do not coat the cherry tomatoes in the paste as the burst of flavour offsets the richness of the spices and makes a nice fresh contrast when eating.

  • Don’t worry if the tomatoes aren’t perfect in shape remember this is homemade cooking and the joy is in the thought.

Instructions:

Step 1: Prepare the prawns

  • Put the raw prawns in a bowl and add 2 Tsp of Red Thai Curry paste

  • This can be left in the fridge to take on the flavour and taken out when ready for cooking.

Step 2: Prepare the tomatoes

  • Cut your cherry tomatoes in half and cut a V as shown in the picture to resemble a heart

  • Dab the tomatoes with kitchen roll to soak up the excess liquid

Step 3: Assemble the skewers & cook

  • Take out your skewers and assemble your prawns and tomatoes on the skewer as pictured above

  • Get the BBQ on/ Grill onto a high heat

  • Once heated add on your skewers.

  • Cut 1/2 wedge of lemon & squeeze over the prawns so you get the extra sizzle after turning and to further flavour

Step 4: Serve

  • Serve! Squeeze over more lemon, salt and pepper. Sprinkle of coriander is optional
