Chicken, Dill, Onion & Mayo on Toast

 
 

A 5-minute budget-friendly recipe that’s perfect for those busy days when you want something tasty without spending hours in the kitchen. This delight is made from a $10 store-bought roast chicken and comes together in no time.

Ingredients:

Serves 1 | 5 minute cook | Approx 545 calories

  • Store-bought roast chicken (about $10)

  • Fresh dill, chopped

  • Red onion, finely chopped

  • Mayonnaise (@heinz_au is my go-to) - can swap for a Greek yoghurt option

  • Sourdough bread, toasted

Instructions:

Step 1: Prepare the chicken

  • Start by removing the skin and bones from your store-bought roast chicken.

  • Chop the chicken into bite-sized pieces and place them in a large bowl.

Step 2: Add the fresh ingredients

  • Add freshly chopped dill and finely chopped red onion to the bowl with the chicken. The dill adds a lovely herbaceous note, while the red onion gives a nice crunch and a bit of sharpness.

  • Mix in the Mayo:

  • Add a generous dollop of @heinz_au mayonnaise to the bowl. Mix everything together until the chicken is well coated. Feel free to add more mayo if you like a creamier chicken salad.

  • Toast the Sourdough:

  • While you’re mixing the chicken salad, toast your sourdough bread until it’s golden and crispy.

  • Assemble the Toast:

  • Once your sourdough is toasted, simply spoon the chicken salad mixture onto each slice. Spread it evenly and generously.
