Prawn and Mango Lettuce Wraps

Got a craving for prawns? Let’s whip up these Prawn & Mango Lettuce Cups. They’re crisp, light, fresh, and come together in no time. Perfect for a quick lunch or a refreshing appetizer!

Ingredients:

Serves 2 | 15 min cook & prep | Approx 1,091 calories (based on 2 wraps per serve)

  • 1 pack of raw prawns

  • 1 packet of taco seasoning

  • 1/2 mango chopped

  • 1 Lime cut into wedges

  • 1 pack of taco wraps

  • Optional - I added some gut seeds - brand @kapaopuku seeds

  • Iceberg lettuce leaves for serving.

Instructions:

Step 1: Prepare the Lettuce Cups

  • Carefully separate the iceberg lettuce leaves, making sure they remain intact to form little cups. Wash and pat them dry. Set aside.

Step 2: Cook the Prawns

  • Mix the raw prawns with the packet taco seasoning until they’re well coated.

  • Heat a pan over high heat and add the seasoned prawns. Fry until the prawns are cooked through and slightly crispy, about 3-4 minutes. Remove from heat and set aside.

Step 3: Prep the Veggies

  • Chop the avocado into bite-sized pieces and sprinkle with chili flakes for an extra kick.

  • Chop the mango into similar-sized piece

Step 4: Assemble the Lettuce cups

  • Lay out the lettuce leaves on a serving platter.

  • Spoon the cooked prawns into each lettuce cup.

  • Add a few pieces of chopped avocado and mango to each cup.

Step 5: Finish with a squeeze of lime

  • Squeeze fresh lime juice over each lettuce cup for a zesty finish.

  • Sprinkle with @kapaipuku seeds for a boost of good gut health.
