Ingredients

Serves 4 | 1 hour prep & cook time | Approx 1,414 calories for the whole pie

  • 2 sheets of puff pastry (I just used on the top, but you can line the bottom with the pastry)

  • 1 -2 chicken breasts

  • 1 Leek and 50g of butter for frying

  • 125g white cup sliced mushrooms

  • Salt and pepper

  • 1 clove of garlic

For the white sauce:

  • 3 Tsbp flour

  • 50g butter

  • 1-2 cups of milk

  • 1 beaten egg for glazing

  • 1 Tsp Dijon mustard

  • Heart shaped cutter for shaping!

  • Pastry brush for glazing the egg

Top tip: If you don’t want to make your sauce then you can use a jar mushroom or white sauce which is a great shortcut

Instructions

Step 1: Prepare

Take your pastry out to defrost ahead of cooking.

  • Preheat the oven to 180 degrees

  • Get your baking tray out and grease with butter and set aside

  • Cut your chicken breasts into medium sized chunks

  • Wash your leek and remove a couple of the outers and then slice thinly, set aside

  • Get your mushrooms out and slice if not pre-sliced

Step 2: Cook your chicken

  • Put oil in a frying pan and get your pan to a high heat

  • You want to semi cook the chicken (not all the way through), but just focus on browning it on the outside for 5 minutes and then take out the pan and set aside

Step 3: Cook the veg

  • Turn the heat down to medium to low and add butter to the pan, add your leeks and mushrooms

  • Cook for 2-3 minutes until soft and set aside

Step 4: Make the white sauce (skip this if using a jar sauce)

  • Add your butter to a saucepan on a medium heat

  • Once it starts to melt add 3 tsbp of flour and mix into a lump like pictured above

  • From here, start by adding 1 cup of milk and then whisking until smooth, then add the second cup of milk and keep stirring until you get the desired consistency on a medium heat, it should be gently bubbling but not boiling. This process can take up to 10 minutes

  • Add salt and pepper

  • Add the Dijon mustard and then stir and turn off

Step 5: Assemble the pie

  • Add the chicken, leeks and mushrooms into the base of the oven dish

  • Pour over the white sauce

Step 5: Finish the pastry

  • Get one sheet of the puff pastry and lay over the top of the dish pressing in the edges to keep it sealed

  • Beat 1 egg in a bowl for glazing

  • Get the second sheet of pastry, use the heart shaped cutter to cut hearts and assemble on top of the pastry as you like

  • Brush with the egg

  • Bake in the oven for approximately 20-30 minutes until the pastry is golden brown

  • Serve with veggies and mashed potato
