Soy sauce and BBQ sauce marinade

Leave to marinade at least 2 hours or ideally overnight

Ingredients:

Prep time 10 mins | Cook time 2-3 hrs| Approx 1,417 | serves 2

  • Pack of pork spare ribs

  • Marinade ingredients:

  • Sweet and spicy BBQ sauce (approx 1/2 a cup)

  • 2 Tsbp of Soy Sauce

  • Salt & pepper

  • Chopped spring onions for garnish (optional)

Top tip

  • Marinade overnight so the meat has chance to tenderise and really absorb the flavour

Instructions:

Step 1: The night before/ minimum 2 hours before cooking

  • Get a baking tray and line with baking paper

  • Put your pork ribs in the tray

  • Pour 1/2 the BBQ sauce and soy sauce, salt and pepper on the ribs and use a brush to coat the ribs on both sides

  • Tip - can save 1/4 of the sauce for further dipping or coating once the ribs are cooked

  • Cover loosely with cling wrap and pop in the fridge

  • Take out the fridge 15 minutes prior to cooking to allow to come to room temperature

Step 2: Prepare the oven

  • Set the oven temperature to 160 degrees

  • Once preheated pop the meat in the middle of the oven (1/2 the cooking time foil on, and for the second 1/2 foil off)

  • Cook for 2-3 hours (depending on how big your ribs are)

  • Take out the oven and leave to cool slightly, if you have any remainder sauce you can

  • Serve with a light side salad and garnish with sliced spring onions
