Easter Egg Cacao Balls in 10-Mins

Ingredients:

Serves 4-6 | 10 mins prep | Approx 889 calories for all (exc Easter egg choc), approximately 100-150 calories per ball

  • Bag of Easter egg balls of your choice (I’m using Darrell Lea with a coloured shell)

  • 1 cup of dates (de-seeded)

  • 1 cup of walnuts

  • 1/4 cup of pistachios

  • 1 tsp vanilla essence

  • 5 tsbp Cacao powder

Top tip: You may want to use latex gloves for the ball rolling

Instructions:

Step 1: Prepare the mixture

  • Get a nutribullet or blender and put into it:

  • The walnuts, pistachios, dates, vanilla essence and cacao powder

  • Blend and put the mixture in the bowl

Step 2: Crush the eggs

  • I usually put them in a plastic pouch and use a rolling pin to crush, leaving some chunky bits.

  • I put 1/2 into the mixture in the bowl and just use my hands to mix in, and leave some of the crumbed shells to roll the balls in for colour on the outside

Step 3: Make the balls

  • Using your hands roll into a size of your choice and place on a plate, when complete pop in the fridge, cover loosely with cling wrap or put into a tupperware or a plastic pouch and eat when ready!
