Quick Sizzling Balsamic Chicken

Cooked glazed chicken

The marinade mixture

Ingredients:

Serves 1 | 10 minutes prep | 15 minutes cook | Approx 473 calories

  • 1 Chicken breast

For the marinade:

  • Balsamic Glaze (approx 1/4 bottle / 3 Tsbp)

  • 1 heaped tsp Dijon mustard

  • Drizzle of honey

  • 1 tsp garlic paste or one finely crushed garlic clove

  • 1 Tsbp olive oil

Top tip:

  • This is a great meal prep dish that can be made ahead of time

  • Poke holes in the meat with a fork to allow the meat to fully absorb the flavour

  • Ideally marinade overnight/ or at least 2 hours before to tenderise the meat

  • Chicken can be put in a plastic pouch in the marinade and frozen ahead of cooking

Instructions:

Step 1: Make the marinade

  • Add the marinade ingredients to a bowl and mix

Step 2: The chicken

  • Lightly prick some holes in the chicken breast with a fork and add the marinade, cover with foil and leave until cooking

Step 3: Cook

  • You can use the BBQ, grill pan or frying pan on a medium heat to cook your chicken breast, basting with any leftover marinade, it should take approx 15 mins depending on the thickness of your breast
