Vegetable Frittata - Easy meal prep

Ingredients:
Serves 4-5 (will make a few days' worth of breakfast) | Approx 30-25 mins prep & cook | Approx 582 calories
6 Eggs
Punnet of cherry tomatoes
1 Bunch of asparagus
3 Large mushrooms
Cheese
Salt, pepper
Drop of milk
Chopped parsley - optional
Instructions:
Step 1: Prepare the ingredients
Preheat the oven at 180 degrees and get a lined tray ready
Cut the tomatoes in half
Trim the edges of the asparagus stalks
Slice the mushrooms
Step 2: Fry the Asparagus and mushrooms until gently tender
Step 3: Beat the eggs and assemble
Beat the eggs with salt, pepper and a bit of milk, and add parsley
Layer the baking tray with the ingredients, pour the egg mixture over and top with cheese
Bake in the oven for approx 15-20 mins (depending on how thick your tray is)
Eat then and there or slice up and cling wrap/ tupperware for the week!
