Vegetable Frittata - Easy meal prep

Ingredients:

Serves 4-5 (will make a few days' worth of breakfast) | Approx 30-25 mins prep & cook | Approx 582 calories

  • 6 Eggs

  • Punnet of cherry tomatoes

  • 1 Bunch of asparagus

  • 3 Large mushrooms

  • Cheese

  • Salt, pepper

  • Drop of milk

  • Chopped parsley - optional

Instructions:

Step 1: Prepare the ingredients

  • Preheat the oven at 180 degrees and get a lined tray ready

  • Cut the tomatoes in half

  • Trim the edges of the asparagus stalks

  • Slice the mushrooms

Step 2: Fry the Asparagus and mushrooms until gently tender

Step 3: Beat the eggs and assemble

  • Beat the eggs with salt, pepper and a bit of milk, and add parsley

  • Layer the baking tray with the ingredients, pour the egg mixture over and top with cheese

  • Bake in the oven for approx 15-20 mins (depending on how thick your tray is)

  • Eat then and there or slice up and cling wrap/ tupperware for the week!
