Easy Air Fryer Tandoori Chicken Kebabs – Healthy & High Protein

Ingredients:

Serves 1 | 30 min prep & cook time | Approximately 700 calories (includes rice and Tsatziki)

  • 1 and a 1/2 chicken breast (depending on size or you can use thigh)

  • 1/2 Greek yoghurt 

  • 2 heaped Tsbp of tandoori paste 

  • 1 lemon 

  • Salt and pepper

  • Microwave rice/ salad to serve as an option

Tzatziki side sauce

  • 1/2 tub greek yoghurt 

  • 1/2 cucumber finely chopped 

  • Squeeze lemon and salt and pepper

Top tips

  • Soak your skewers in water the night before to avoid them burning when it comes to cooking

  • To get the best flavour and most tender chicken have the chicken marinade in the mix as long as possible. 


Instructions:

Step 1: Pre-soak your bamboo skewers

  • Pre-soak the bamboo skewers in water the night before or a couple of hours before (so they don’t burn during the cooking process)

Step 2: Make the marinade

  • This can also be made the night before. In a bowl mix 1/2 squeeze of lemon juice, 1/2 tub of Greek yoghurt, salt and pepper, 2 heaped Tbsp. of Tandoori paste 

Step 3: Prepare the Tzatziki

  • Mix 1/2 cucumber finely chopped, 1/4 tub of Greek Yoghurt, salt, pepper and a squeeze of lemon, mix, taste and set aside.

Step 4: Prepare the chicken 

  • Cut the chicken into cubes, and place in the bowl with the marinade, ideally leave to sit in the fridge for minimum 30 mins if cooking on the day but ideally 2 hours or overnight. This is a great one to meal prep ahead of time.

Step 5: Cook the chicken

  • Take the bamboo skewers out the water and start assembling the skewers with the meat 

  • Air-fry for 15 minutes, turning in the process and once cooked serve with yoghurt and mango chutney and rice
