Zesty Chargrilled Corn Salsa (V)
Corn salsa perfect for BBQ or summer sides
Or serving on sweet potato mash with Yoghurt as a veggie dinner
Preboil the corn
Butter and salt the corn prior to grilling
Chargrill the corn

Cut the corn “down” off the cob
Ingredients:
Serves 4 | 20 mins cook & prep time | Approx 316 calories
2 Corns on the cobs (pre-boiled & chargrilled)
1 bunch of coriander
1 red onion
1 medium tomato
1 lime
1 green chilli
Salt and pepper
Serving ideas: Makes a great vegetarian dinner with sweet potato, or entertaining ideas with tortilla chips, or a side salad for a BBQ
Instructions:
Step 1: Cook the corn
Boil the corn in a saucepan for 5-7 mins (doing this before chargrilling makes it juicy),
Once your corn is cooked, drain and pat dry with kitchen roll
Heat the grill pan / BBQ and brush the corn with butter, salt and pepper and chargrill for 5 mins to get some colour on the corn.
Once cooked and cooled cut the corn off the cob and set aside in a bowl
Step 2: Make the salsa
Finely chop your onion
Finely chop your tomato and dab excess juices with kitchen roll
Slice the chilli
Finely chop coriander
Add the juice of 1 lime, salt and pepper and mix with the corn, taste and adjust the seasoning to your desire
