Marry Me Salmon Mac

Finished dish

Add stock

Onion, garlic, salt and pepper

Add macaroni

Add tomato paste

Finished pasta dish with cream added and parmesan

Add fresh tomatoes

Add basil, and salmon

Ingredients:

Serves 2 (but likely to have leftover pasta) | 1 hour prep and cook time | Approx 566 calories

  • 2 salmon fillets

  • 1 cup of pasta of your choice (I am using gluten free macaroni which reduces calories)

  • Basil 

  • 1 red onion

  • 3 garlic cloves 

  • 3 tsbp tomato paste

  • 1 tomato 

  • Mixed dried herbs

  • 3 vegetable stock cubes - 1 and 1/2 cups of stock

  • Small cream (to thicken)

  • Sprinkle of parmesan

Instructions:

Step 1: Chop the ingredients

  • Cut the onion finely

  • Crush or finely chop the garlic cloves

  • Finely chop the fresh tomato

  • Boil the kettle and mix the stock cubes 

Step 2: Fry the ingredients

  • On a medium heat fry the onion for a couple of minutes, add the garlic and herbs.

  • After a few minutes add the tomato paste and mix,

  • Add the fresh tomatoes, after a few minutes;

  • Add the stock and stir, let the mixture boil and then turn down to medium - low to let it simmer (this will take about 20-30 mins to reduce)

Step 3: Get the pasta on

Step 4: Thicken the sauce

  • Add some cream (start with 1/4 cup, turn the heat up to gently boiling and leave to reduce for 5 minutes), keep it on longer if it needs more, if you need to add more liquid you can add a few spoons of pasta water

Step 5: Cook your salmon

  • You can air fry, oven or bake (will take approx 10 mins)

Step 6: Drain the pasta & serve

  • Mix the pasta into the sauce, add some pasta water if which will help thicken.

  • Serve, add your salmon fillets on top, garnish with the basil, parmesan, salt and pepper

  • Serve with a side salad
