Dab the excess liquid off the tomatoes

Pickle your sliced onions

Ingredients:

Serves 2-3 | 10 mins assemble | Approx 138 calories

  • Amount of tomatoes will depend on how big your serving platter is but I’m using 8 medium sized tomatoes 

  • 1/2 tub of split green olives 

  • 1/2 red onion

  • 1/4 cup or 4 TSBP of red onion 

  • Dill / Can use basil instead 

  • Salt & pepper 

Instructions:

Step 1: Prepare the red onion 

  • Slice 1/2 red onion finely into rings

  • Place into a bowl and put 4 tbsp. of red wine vinegar in with salt and pepper to pickle the onion and set aside 

Step 3: Slice your tomatoes 

  • Wash your tomatoes and pat dry with kitchen roll

  • Get a chopping board and slice 1cm thick tomato rounds (like in my picture), lay them flat

  • Put kitchen roll over the tomatoes and dab as much tomatoes juice excess as you can

Step 4: Chop the garnishes

  • Finely chop 1/2 punnet of sliced olives (you can use more and these are for sprinkling over)

  • Finely chop some dill or herbs of your choice 

Step 5: Arrange the platter 

  • Lay the slices of tomatoes on the platter 

  • Sprinkle with salt and pepper seasoning well 

  • Sprinkle the olives and dill over to add some colour and beauty
