Peri Peri Cauliflower Pittas (V)

Roast your cauliflower in the Peri Peri spice mix

Ingredients:

Serves 2-4 | 45 minutes cook | Approx 1,349 calories for whole plate & two pittas |

  • 1 Cauliflower cut into florets

  • Peri Peri seasoning mix

  • Pitta pockets (I use the brand mission)

  • For serving: store bought coleslaw

  • Salad dressing of your choice to mix the slaw in

  • 1 Cucumber

  • 1 Red chilli

  • 1/2 Cos Lettuce

  • 1/2 Lime

  • Pickled chilli’s

  • Hot chilli sauce optional

Instructions:

Step 1: Prepare the cauliflower

  • Preheat your oven to 180 degrees.

  • Cut your cauliflower into small florets and place in a baking tray.

  • Add in the packet spice mix, salt, pepper and a drizzle of oil and mix well.

  • Roast in the over for approximately 45 minutes until soft and brown.

Step 2: Make your slaw mix

  • Put your packet slaw mix in a bowl.

  • I mix mine with a high protein Greek yoghurt (1/2 tub) and squeeze of siracha, squeeze of lime, salt and pepper.

  • Add in sliced red chilli (optional).

Step 3: Prepare your additions and plate up

  • Slice your cucumber.

  • Chop your lettuce.

  • Add pickled chilli’s.

  • Toast your pittas.

  • Serve your cauliflower and assemble how you like with all of your favourite sauces.
