Peri Peri Cauliflower Pittas (V)
Roast your cauliflower in the Peri Peri spice mix

Ingredients:
Serves 2-4 | 45 minutes cook | Approx 1,349 calories for whole plate & two pittas |
1 Cauliflower cut into florets
Peri Peri seasoning mix
Pitta pockets (I use the brand mission)
For serving: store bought coleslaw
Salad dressing of your choice to mix the slaw in
1 Cucumber
1 Red chilli
1/2 Cos Lettuce
1/2 Lime
Pickled chilli’s
Hot chilli sauce optional
Instructions:
Step 1: Prepare the cauliflower
Preheat your oven to 180 degrees.
Cut your cauliflower into small florets and place in a baking tray.
Add in the packet spice mix, salt, pepper and a drizzle of oil and mix well.
Roast in the over for approximately 45 minutes until soft and brown.
Step 2: Make your slaw mix
Put your packet slaw mix in a bowl.
I mix mine with a high protein Greek yoghurt (1/2 tub) and squeeze of siracha, squeeze of lime, salt and pepper.
Add in sliced red chilli (optional).
Step 3: Prepare your additions and plate up
Slice your cucumber.
Chop your lettuce.
Add pickled chilli’s.
Toast your pittas.
Serve your cauliflower and assemble how you like with all of your favourite sauces.
