Thai Inspired Turmeric Omelette

Before the folding of the Omelette

The gorgeous Omelette in all it's glory!

Ingredients:

Serves 1 | 10 minute prep & cook | Approx 481 calories

  • 3 Large eggs

  • Chopped coriander (handful)

  • 1/2 pack of beansprouts

  • 1 Large mushroom

  • Salt, pepper, knob of butter (1tsbp)

  • 2 Tsp turmeric powder

  • Chilli sambal for topping as an optional

Ingredients:

Step 1: Prepare the Omelette mix

  • Whisk 3 beaten eggs with turmeric, salt and pepper.

  • Add the coriander and stir, set aside.

Step 2: Prepare the filling

  • Slice the mushroom and heat the frying pan on a medium heat.

  • Fry your mushroom in butter or oil and once almost cooked take out the pan and set aside on a plate.

  • Get a large handful of beansprouts ready on a plate.

Step 3: Make the Omelette

  • On a medium heat, add butter to a frying pan.

  • Once the butter starts to melt and the pan is hot add the mixture and let it cook for 3-4 mins, keeping the heat on medium.

  • Once it starts to cook but isn’t quite cooked on top add your cooked mushrooms, coriander and raw beansprouts (as per picture one).

  • Fold the Omelette in half and leave for another 3-4 minutes to cook through.

Serve on a plate and add chilli sambal over the egg as optional!
