Pork Tenderloin in BBQ & Dijon marinade

Ingredients:
Serves 2 | 45-minute cook | Approx 868 calories
1 Pork tenderloin
2 Tsbp of Dijon Mustard
2 Tsbp of honey
2/3rds of a cup of your favourite BBQ sauce
Mixed dried herbs (sprinkle in)
1 Tbsp. of smoky paprika
1 Tsp of Cumin
Salt and pepper
Instructions:
Step 1: Marinade
Put all the above spices and sauces in a bowl and mix
Prick the pork tenderloin with a fork to make some light holes so the marinade can get into the meat
Put the pork tenderloin in the marinade and cover with cling wrap, and marinade overnight or at least a minimum of two hours
Step 2: Cook
Preheat the oven - 160 degrees (unless you want to use a weber)
Take the pork out the fridge for 15 minutes to let it come down to room temperature
You can cook the meat on the BBQ or Grill pan on the stove with a spray of oil
Get the pan on a high heat and sear the meat for a few minutes each side until caramelised
Put in the oven uncovered for approx. 15-20 minutes (cook time will depend on how thick the pork loin is).
Once cooked through (can be slightly pink), let it rest and serve.
