Pork Tenderloin in BBQ & Dijon marinade

Ingredients:

Serves 2 | 45-minute cook | Approx 868 calories

  • 1 Pork tenderloin

  • 2 Tsbp of Dijon Mustard

  • 2 Tsbp of honey

  • 2/3rds of a cup of your favourite BBQ sauce

  • Mixed dried herbs (sprinkle in)

  • 1 Tbsp. of smoky paprika

  • 1 Tsp of Cumin

  • Salt and pepper

Instructions:

Step 1: Marinade

  • Put all the above spices and sauces in a bowl and mix

  • Prick the pork tenderloin with a fork to make some light holes so the marinade can get into the meat

  • Put the pork tenderloin in the marinade and cover with cling wrap, and marinade overnight or at least a minimum of two hours

Step 2: Cook

  • Preheat the oven - 160 degrees (unless you want to use a weber)

  • Take the pork out the fridge for 15 minutes to let it come down to room temperature

  • You can cook the meat on the BBQ or Grill pan on the stove with a spray of oil

  • Get the pan on a high heat and sear the meat for a few minutes each side until caramelised

  • Put in the oven uncovered for approx. 15-20 minutes (cook time will depend on how thick the pork loin is).

  • Once cooked through (can be slightly pink), let it rest and serve.
