Warm Mediterranean Salad with Halloumi & Grilled Veg

Ingredients:

Serves 4 | 20 min cook time | Approx 1,030 cals

  • 2 Large zuchinnis (Courgettes)

  • 1 Large yellow capsicum (pepper)

  • Rocket

  • 1/2 Red onion

  • Block of Halloumi cheese

  • Good virgin olive oil

  • Salad dressing: 2 Lemons squeezed, oregano flakes, salt and pepper and 4 Tsbp virgin olive oil.

Instructions:

Step 1: Make the dressing

  • Squeeze 1 lemon and pour into a bowl

  • Add the Oregano flakes, salt and pepper

  • Add the virgin olive oil and whisk

Step 2: Organise the vegetables

  • Slice the Zuchinni and capsicum and put in a separate bowl, add some of the dressing. mix and set aside for 15 minutes to let it take on the flavour

  • Thinly slice the red onion and set aside (I keep this raw) add a couple of teaspoons of the dressing so it has some flavour and brings the sweetness out of the onion

Step 4: Slice the Halloumi and set aside

Step 5: Griddle pan the vegetables

  • Get a griddle pan on a medium heat

  • Chargill the peppers and zuchinni slices

  • Once browned take out and set aside on a plate and add the Halloumi slices to grill

  • Leave to cool slightly before serving

  • Assemble a bed of rocket on the platter, spoon some dressing and layer marinated raw red onion, cooked Zuchinni, Halloumi, Capsicum and enjoy!
