Sesame Seed Chicken Meatballs
Meatballs after they have been taken out the fridge
The delicious stock adds a bit of magic to this dish
Ingredients:
Serves 4 | 30-45 min prep and cook | Approx 206 calories
1 Regular pack of Chicken mince
2 cloves of garlic
Oregano/ dried herbs
Sesame seeds
Salt & Pepper
1 cup of chicken stock
Instructions:
Step 1: Prepare the meatballs
Add your chicken mince to a bowl.
Add salt and pepper.
Add dried oregano / dried herbs (as much or little as you like).
Add 1/2 packet of sesame seeds (again personal preference of how much).
Step 2: Make the meatballs
Mix the mince and roll into balls, put on a plate.
Put in the fridge for at least 30 minutes to firm them up, can also be made the night before ahead of time.
Step 3: Prepare the stock
Boil the kettle.
Add 1 cube of chicken stock to a cup of boiling water and stir.
Step 4: Cook the meatballs
Heat a frying pan with extra virgin oil on a medium heat.
Once it’s hot add your meatballs to the pan (they should sizzle) and start browning them on the outside.
Once they are brown add 1/2 cup of stock to the pan (you may not need a full cup).
Cover the pan with a lid for approx 10-15 mins so the meatballs cook through (add more stock if you need, you just want a little bit left in the pan to add some flavour).
Step 5: Serve
Serve these delicious meatballs with all of your favourite things, I pair mine with a greek salad and greek yoghurt, with a squeeze of lemon mixed with fresh chopped dill.
