Steak with a Tomato Salsa

The finished product - A low-calorie high protein recipe, adding some magic to your meat with a zingy zesty salsa

Ingredients:

Serves 1 – double portions for each person | 20 minute cook | Approx 792 calories

  • Steak of your choice (I am using a 300g rump)

  • 1 Sweet potato Chopped (for roasting or Air frying)

For the salsa: adjust ratios to your flavour profile – there are no rules here:

  • 1 tomato or a punnet of cherry tomatoes finely chopped

  • Chopped Coriander (as much or less as you like)

  • 1 Red Chilli sliced – optional

  • 2 Cloves garlic, finely chopped

  • 1 Avocado

  • ½ Red Onion finely chopped

  • Salt & pepper

  • 1 Lime

Instructions:

Step 1: Prepare the potato

  • Preheat the oven to 180 degrees.

  • Cut your Sweet potato into chunks, roast in the oven for approximately 30-35 mins / or Airfry with salt, pepper, olive oil.

  Step 2: Make your salsa

  • Chop all of your salsa ingredients (except your Avocado) and pop in a bowl.

  Step 3: Cook your meat

  • Take your steak out 15 minutes before cooking to bring it to room temperature.

  • Season your steak with lots of salt and pepper.

  • Add oil to your frying pan, medium to high heat.

  • Fry your steak on a hot pan, hear the sizzzle!

  • My approach to medium rare is to cook the steak for 2-3 minutes each side, turning twice sometimes a third or fourth depending on thickness.

  • Once your steak is cooked, rest for 10 minutes with foil lightly on top.

Step 4: Serve

  • Mix your salsa ingredients,

  • Add ½ - 1 lime juice with lots of salt & pepper and mix and taste (adjust to your likening).

  • Chop your avocado into chunks and lightly mix in the salsa.

  • Take out your sweet potato.

  • Slice your steak, drizzle the salsa mix on the top.
