Spiced Chicken Skewers with Lemon & Parmesan - 15 min meal

Ingredients:

Serves 2 | 15 mins cook | Approx 374 calories

  • 1-2 chicken breasts depending on size

Marinade:

  • 2 Tsbp. olive oil

  • 1 heaped Tbsp. Paprika

  • Juice of 1 lemon

  • 1 Tsp garlic

  • 1 Tsp of Siracha chilli sauce

  • 1 Tsbp grated parmesan

  • Chopped coriander

  • Lemon wedges to serve/ Coriander to garnish

Top Tips:

  • Bamboo skewers - soak these for a few hours or overnight before cooking to avoid them burning during the cooking process.

  • Chicken can marinade in the sauce the night before and be meal prepped for ease and convenience.

  • The best part? You can prep them ahead of time and freeze the skewers

Instructions:

Step 1: Make the marinade

  • Mix the marinade ingredients in a bowl

Step 2: Chicken

  • Cut the chicken breast into small chunks

  • Mix the chicken in the marinade and leave for at least 2 hours if you can

  • Assemble the chicken on the skewers

Step 3: Cook

  • Use a BBQ, Grill or Fry pan - on a medium heat, hot enough to hear the sizzle

  • This will take approx 15 minutes, turning so each side is golden brown and basting in any leftover marinade through the cooking process

  • Squeeze some lemon over when cooked and coriander is optional
